Fresh red tea from the Koushun cultivar, from the Miyazaki region of Japan.
Precisely processed leaves from a garden that operates in a purely natural way and is dedicated to producing specialty products that are always available in limited quantities.
They also make their own fertilizer by fermenting grass and as they say, they are a bit "unique, fun and crazy"! And that's exactly what their teas are and that's exactly what I'm looking for :).
The leaf is handmade, meticulously crafted, and ranges in colour from light to dark brown to red. The appearance is reminiscent of wuyi oolong.
The aroma of the dry leaf is a combination of ripe fruit and sweet mineral notes.
The infusion is clear, bright and amber in colour. The palate is full-bodied, combining ripe fruit, grapes, figs, peaches, a hint of spice with a light minerality.

Brewing 150ml: 6g, 98C, first infusion 60s, second infusion 30s, third infusion again 60-70s, possibly longer if you don't want to continue with a weaker fourth infusion.
